Easy Jambalaya That Zoe Made

I'd never had Jambalaya till i made this, so im not sure how 'authentic' it is, but it sure is yummy, just the right amout of spicy for me.
Ingredients:
1 chorizo saussage, sliced thickly
1 chicken breast (skin off) diced
3 cloves garlic, minced
1 brown onion, chopped
1 stick cellery, cliced
1/2 a red capsicum (bell pepper) diced
1/2 a green capsicum, diced
1/4 tsp ceyanne pepper
1 tsp oregano
1 tsp thyme
1 tsp basil
1 bay leaf
140g tub tomato paste
1 cup rice
2 cups chicken stock
1 tsp sugar
thinly sliced spring onions(scallions) for garnish
Directions:
1. In a non-stick frypan, cook the chorizo for about 4 minutes or so, then drain / blot with paper towel to remove excess grease. (you dont have to do this if you're not a fat-nazi like me) Set aside.
2. Spray a heavy saucepan (with a tight fitting lid) with oil and cook the garlic, onion, cellery and capsicums to the saucepan and cook for 2 minutes or so. add the chicken and cook for another 4 minutes...till the chicken is browned like.
3. Add everything else to the pan, except rice and spring onions.
4. Bring to the boil and add rice. Cover and simmer for 20 minutes, stirring occasionally to stop it from sticking to the bottom of your saucepan.
5. Turn off heat and let it sit for 10 minutes.
6. Serve with springonions on top.

8. ....would also be good with prawns/shrimp if you wanna make it a bit fancier.
