Maybe not exactly traditional, but very easy and wonderful when toasted and spread with butter. This bread is baked in a loaf pan, and produces a very simple, dense bread loaded with raisins.
Ingredients:
1 1/2 cups buttermilk
2 tablespoons melted butter or 2 tablespoons margarine
1 slightly beaten egg
1 1/4 cups raisins
3 cups flour
2/3 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Directions:
1. Preheat oven to 350 degrees.
2. In medium bowl, combine buttermilk, melted butter, egg, and raisins.
3. Set aside.
4. In large bowl, combine dry ingredients and mix to combine.
5. Add buttermilk mixture to dry ingredients and mix until combined.
6. Spoon into greased loaf pan and bake for 50-55 minutes.
7. Leave in pan for 1 minute.
8. Remove to wire rack to cool.
