Easy Healthy Cornbread

A great healthy alternative to packaged cornbread mixes.
Ingredients:
3 cups whole wheat flour
1 cup sucanat (or rapadura)
1 cup cornmeal
2 t. baking powder
1 t. salt
2 1/2 cups milk
4 large eggs
1 cup coconut oil (can use olive oil)
Directions:
1. Preheat oven to 350-degrees
2. Combine flour, sucanat, cornmeal, baking powder and salt in large bowl.
3. In a separate bowl, combine milk, eggs, and oil; mix well.
4. Add to flour mixture; stir until just blended.
5. Pour into greased 9x13 baking dish
6. Bake for 35-40 minutes or until toothpick inserted in center comes out clean.
7. Cool slightly before cutting, serve warm.
