Easy Fried Oysters

It could not get any easier than this. We have these at least once a month. Serve with a tartar sauce or a good cocktail sauce with added fresh lime juice.
Ingredients:
3/4 c yellow cornmeal
1/3 c all-purpose flour
1/2 ts salt
1 tablespoon cajun seasoning or texas dust.
24 oz select oysters; drained
canola oil for deep frying
fresh parsley sprigs
lemon or lime wedges
Directions:
1. Combine cornmeal, flour, seasonings and salt
2. Dredge oysters in cornmeal mixture.
3. Fry oysters at 375 degrees until oysters float to the top and are golden brown; drain well on a paper bag or paper towel.
4. Transfer to serving platter and garnish with parsley and lemon wedges.
5. Yeild: 2 dozen.
