Got this from the Rice-a-Roni site. I love to use Rice-a-Roni to make different dishes because its always so flavorful and sometimes I don't have regular rice on hand or the time to cook a dish from scratch. We love the stuff!!
Ingredients:
1 (6 7/8 ounce) package rice-a-roni, spanish rice flavor
1 1/2 lbs ground beef (lean)
1 small onion, chopped
1 small green pepper, diced
2 (14 ounce) cans beef broth plus 1 can water (in empty broth can)
1 (15 ounce) can pinto beans, drained (you can use light red kidney beans if you prefer)
1 (14 1/2 ounce) can crushed tomatoes
1 (11 ounce) can corn, drained
1 (4 ounce) can diced green chilies
1 teaspoon chili powder (i used 2)
sliced green onion, grated cheese, salsa and sour cream for garnish
Directions:
1. Brown beef in a large dutch oven, adding special seasoning packet.
2. Add chopped onion and green pepper and green chilies. Saute until veggies are tender.
3. Drain.
4. Add remaining ingredients to beef mixture, excluding rice and bring to boil.
5. Add rice to pot. Cover and lower heat, simmering until rice is tender.
6. Serve in bowls topped with sliced green onion, cheese, salsa and sour cream.
