This is an easy recipe for fajitas that are tasty and flavorful. Prep time is marinating time. The tequila, lemon juice, olive oil, and basalmic vinegar help break down the toughness of the meat. If you can find it, Mexican oregano has a better flavor than regular oregano. The brown sugar, adobo, oregano and liquid smoke give the meat a depth of flavor. It’s best to marinate overnight for the full flavor and cook the meat on the grill. Use a good Tequila-it makes a difference.
Ingredients:
1 lb skirt steak
1 ounce tequila
2 tablespoons balsamic vinegar
1/4 cup olive oil
1 tablespoon horseradish
2 garlic cloves
1 tablespoon oregano
1/8 cup brown sugar
2 tablespoons liquid smoke
1 jalapeno, chopped
1 lemon, juice of
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 tablespoon olive oil
1 teaspoon cumin
1 garlic clove
12 mini flour tortillas
1 cup sour cream
2/3 cup picante sauce
1 garlic clove, chopped
chopped tomato
shredded lettuce
diced avocado
2 cups colby-monterey jack cheese, shredded
Directions:
1. In a large resealable bag, place meat, Tequila, 1/4 C olive oil, horseradish, liquid smoke, basalmic vinegar, 2 cloves garlic, adobo, oregano, brown sugar, liquid smoke, chopped jalapeno, and lemon juice.
2. Marinate meat overnight, turning once.
3. Reserve marinade.
4. Grill meat over medium hot coals about 4 minutes per side. Take meat off grill and let rest 10 minutes before slicing into strips about 1 inch wide.
5. Pour marinade into a skillet on the stovetop and add veggies and 1 T olive oil. Saute until crisp tender, about 6-8 minutes.
6. For sauce:.
7. Mix sour cream, 1 clove garlic, cumin, and 2/3 C picate sauce in a small bowl.
8. Heat 12 flour tortillas in the microwave until just warm.
9. Serve flour tortillas with veggies, picante/sour cream sauce, avocados, tomatoes, lettuce, and cheese. Guests can “build” their own mini-fajita.
