I've not had good egg salads anywhere since then until I decided to make them my self. Read more . I love egg salad. This recipe is simple to make and can be stored in the fridge until needed.

1/8 teaspoon freshly ground pepper
3 tablespoons sweet pickle relish
4 hard-boiled eggs plus 2 egg whites, coarsely chopped
2 boiled egg yolks, mashed
2-3 tablespoons finely chopped green onion
1 stalk celery, chopped
Directions:
1. Boil 6 eggs, remove shells. Remove 2 yolks and mash. Chop remaining 4 whole eggs plus 2 egg whites.
