This is a very easy dessert to prepare should be made a day ahead as this recipe improves with 24 hours of refrigeration. I found this recipe on the internet about 10 years ago and it became a family favorite. Its a wonderful dessert to take with you to a pot luck event and its always nice to have on a holiday dessert table.
Ingredients:
1, 16 ounce box of graham crackers
2, small 4 ounce boxes of vanilla instant pudding
2 cups whole milk
1 cup half and half or light cream
2, 8 oz. tubs of cool whip
1 plastic tub of prepared chocolate fudge frosting
1 bag mini chocolate chips or 1/2-1 cup shaved chocolate curls
Directions:
1. Mix the pudding mix with the milk and then fold in only ONE tub of Cool Whip in a bowl and set aside.
2. In a 13x9 inch pan, place a layer of graham crackers, breaking some to fit, covering the entire bottom of the pan.
3. Spread 1/2 of the pudding mix over this layer, making it even and smooth.
4. Spread a 1/2 inch layer from the other tub of Cool Whip over pudding mix and cover with graham crackers.
5. Repeat the layers, with grahams as the last layer.
6. Heat up the prepared frosting in a microwave (remove top and foil circle if there is one before microwaving) and heat for one minute.
7. Pour the frosting over the graham cracker layer, cover with aluminum and refrigerate overnight.
8. Before you serve, add a final layer of Cool Whip, sprinkle with chocolate curls or mini chips.
9. *The original recipe came from and so did the photograph.* I use the extra tub of Cool Whip which isn't in the original recipe because it adds a lovely layer of whipped cream to each layer which adds to the richness of this simple and easy dessert. This recipe has been around a long time and should be considered a classic by now.
10. Variations:
11. Instead of vanilla pudding mix, try butterscotch pudding and use Vanilla Wafers for the crust and cookie layers. Do not use the chocolate frosting. Just leave Cool Whip on top as the last layer. White chocolate curls are great on the top! Its delicious!
12. A cup of canned pumpkin can be added to the vanilla pudding and ginger snap cookies can be exchanged for graham crackers. Instead of a chocolate frosting, use a vanilla frosting and sprinkle lightly with cinnamon. YUM! I made this for Thanksgiving and it was a hit. ( I used both vanilla wafers and ginger snaps for different layers.)
13. For the Chocoholics out there, use Chocolate grahams or the chocolate wafer cookies. Use a chocolate pudding (I used one small box of vanilla pudding and one of chocolate, mixed with the milk and Cool Whip and layer both for a gorgeous layered dessert. You can use a chocolate frosting for the top and if you sprinke white chocolate curls over this, you've got a masterpiece on your hands.
14. Coffeeholics! Try adding powdered coffee to your vanilla pudding. This goes well with the chocolate wafers instead of the graham crackers. My friend added chopped chocolate-covered expresso beans on the top of her cake which was interesting and a bit crunchy.
