Pollo Francesca is just a fancy way of saying chicken with spinach, ham, mushrooms and cheese. It is good however you say it and this is an easy way to make it!
Ingredients:
6 boneless, skinless chicken breasts
1/2-1 cup all-purpose flour
6 tablespoons butter
1 tablespoon oil
1-10 ounce box frozen, chopped spinach;cooked and well drained
3/4 pound thinly sliced ham
3/4 pound sliced provolone
1 can cream of mushroom soup
1 cup white wine
1/2 cup water
chopped parsley to garnish
Directions:
1. Dredge chicken breasts in flour. Shake excess.
2. In a large skillet, heat butter and oil until combined. Use moderate heat.
3. Add chicken breasts and cook until done and crisp on both sides.
4. Remove chicken and set aside on platter.
5. In the same skillet, using low heat, combine mushroom soup, wine and water.
6. Increase heat to high, stir sauce until thickened, then lower heat.
7. Return chicken to skillet, layer each breast with spinach, 2 slices of ham and enough cheese to cover each individual chicken breast.
8. Cover skillet and heat over low until cheese is melted.
9. Carefully transfer to serving plate and garnish with chopped parsley and remaining sauce.
