Easy Dijon Roasted Potatoes

An excellent side dish - be sure to stir the potatoes often for even cooking and browning. Leftovers can be a good thing. Enjoy them cold as a salad.
Ingredients:
1 1/2 lbs medium potatoes, cut into eights or 1 1/2 lbs mini potatoes, halved
1/2 cup olive oil
1/4 cup french's dijon mustard
1 tablespoon dried oregano, basil or 1 tablespoon rosemary, leaves
salt and pepper
Directions:
1. Place potatoes in a large baking dish or roasting pan.
2. Combine remaining ingredients. Drizzle over potatoes. Toss to coat.
3. Bake at 424F for 30-40 minutes, stirring often, until potatoes are tender.
