Stewed tomatoes are great for all sorts of dishes. When I was a kid, I loved them with al dente pasta. But they have too much sugar in them and they're so very expensive! This recipe uses 7 large Roma tomatoes and a small amount of vegetables and spices for seasoning so it's very inexpensive. Read more . Add sugar if you like but I put in two drops of Stevia with great results. Try some over steamed vegetables or riced cauliflower!
Ingredients:
7 large roma tomatoes
1 tablespoon butter
1 celery stalk, finely chopped
1/4 cup green bell pepper, finely chopped
1/4 cup onion, finely chopped
salt, pepper, oregano, rosemary, thyme or other seasonings as desired
Directions:
1. Put tomatoes in a large cooking pan and cover with boiling water. Let sit about a minute then plunge into ice water. Let sit another minute then remove, cut off ends, and slip the skins off. Core if desired and cut into chunks.
2. Put the tomato chunks in a large pan on medium heat. Add butter, celery, bell pepper, and onion, cover, lower heat and let stew for about 30 minutes. Check and stir now and then.
3. Add spices, taste and adjust seasoning if needed.
