TANGY CRUNCHY DELICIOUS
Ingredients:
easy country salmon cakes croquettes n lemon sauce
1 - 7 1/2 ounce can salmon, drained and flaked
1/3 cup of saltine cracker crumbs
1 egg, slightly beaten
2 tablespoons of chopped onion
2 tablespoons of milk
1 tablespoon of lemon juice
2 tablespoons butter or margarine
in medium bowl, combine all ingredients except the butter, and blend well. shape the mixture into 4 patties. melt
the butter in a skillet and fry the patties on both sides until golden brown and heated throughout
lemon sauce
1 c. lemon or orange juice
2 tbsp. cornstarch diluted in 1/4 c. cold water
bring all ingredients to a rolling boil in saucepan. cook until sauce is clear. serve hot over salmon croquettes.
Directions:
