easy country salmon cakes croquettes n lemon sauce |
1 - 7 1/2 ounce can salmon, drained and flaked |
1/3 cup of saltine cracker crumbs |
1 egg, slightly beaten |
2 tablespoons of chopped onion |
2 tablespoons of milk |
1 tablespoon of lemon juice |
2 tablespoons butter or margarine |
in medium bowl, combine all ingredients except the butter, and blend well. shape the mixture into 4 patties. melt |
the butter in a skillet and fry the patties on both sides until golden brown and heated throughout |
lemon sauce |
1 c. lemon or orange juice |
2 tbsp. cornstarch diluted in 1/4 c. cold water |
bring all ingredients to a rolling boil in saucepan. cook until sauce is clear. serve hot over salmon croquettes. |
