Easy Coconut Fried Shrimp

A different twist on this favorite fried dish! Don't skip the coconut oil!
Ingredients:
2 pounds large shrimp
1 cup flour
1 teaspoon granulated sugar
1/2 teaspoon salt
1 egg, slightly beaten
1 cup ice water
2 tablespoons virgin coconut oil
1 teaspoon curry powder
2/3 cup grated coconut
vegetable oil for frying
Directions:
1. Shell and devein shrimp leaving tail intact.
2. Pat shrimp dry with paper towel and set aside.
3. In a bowl, combine flour, sugar, salt, egg, water and 2 tablespoons coconut oil.
4. Beat flour mixture until batter is smooth.
5. Mix together in a separate bowl, combine the coconut and curry powder.
6. Dip shrimp into batter and then into coconut mixture.
7. Deep-fry in vegetable oil until golden.
