Easy Chicken Jalfrezi With Vegetables

Ingredients:
2 tablespoons olive oil
1 onion, diced
3 potatoes, peeled and cubed
3 carrots, peeled and cubed
2 cups leftover cubed roasted cooked chicken
1 (14 1/2 ounce) jar patak original jalfrezi cooking sauce
7 ounces water or 7 ounces chicken broth
1/2 green pepper, diced
Directions:
1. Over medium heat, heat olive oil in heavy frying pan.
2. Saute onion, potatoes and carrots until browned.
3. Add chicken, sauce, green peppers and broth.
4. Heat to just a boil, cover and reduce to low.
5. Simmer on low until potatoes and carrots are tender at least 1 hour.
6. Serve over rice.
