Easy Chicken and Dumplings

This is a delicious meal in one that is total comfort food! Serve with homemade corn bread and enjoy!!
Ingredients:
4 boneless skinless chicken breasts
1 (4 1/2 ounce) can refrigerated buttermilk biscuits
1 (14 ounce) can reduced-sodium chicken broth
1 small onion, chopped
1/3 cup celery, chopped
2 tablespoons flour
1 (12 ounce) jar 98% fat free chicken gravy
1 cup fat-free half-and-half or 1 cup milk
1/2 cup frozen peas (optional)
1 bay leaf
1/4 teaspoon pepper
Directions:
1. Cut chicken into 1/2-inch pieces.
2. Flatten each biscuit to 1/8-inch thick and cut each into 6 pieces.
3. Spray large, deep nonstick pot with nonstick cooking spray.
4. Heat over medium-high.
5. Add chicken, onion and celery.
6. Cook and stir 6 to 8 minutes or until celery is tender.
7. Blend flour into chicken broth.
8. Stir broth and remaining ingredients, except biscuits, into chicken mixture.
9. Bring to a boil.
10. Add biscuit pieces to chicken mixture.
11. Cover tightly.
12. Reduce heat to medium-low.
13. Cook 10 to 15 minutes or until dumplings are fully cooked, broth is thickened and chicken is done.
14. Remove and discard bay leaf.
15. Ladle chicken and dumplings into individual serving bowls.
16. Refrigerate leftovers.
