Easy Blueberry Pancake for Two

Any fruit can be substituted for blueberries.
Ingredients:
1/2 cup flour
1/2 cup milk
1/4 teaspoon salt
2 eggs
1 cup blueberries, thoroughly drained
4 tablespoons butter
1 lemon
powdered sugar
Directions:
1. Preheat oven to 450°F.
2. Blend flour, milk salt and eggs.
3. Carefully fold in blueberries.
4. In iron skillet, pour batter into sizzling butter,.
5. Bake 15 minutes.
6. Remove from heat and squeeze lemon juice over the pancake.
7. Sprinkle liberally with powdered sugar.
8. Recipe may be doubled.
