Easy Black Bean Soup

I found this recipe on and have made it almost every week since discovering it, with some tweaks to the original recipe. It is low fat, high protein and delicious! A definite crowd pleaser!
Ingredients:
2 tablespoons olive oil
1 medium onion
1 small green pepper
1 small red pepper
2 tablespoons cumin
1 teaspoon cayenne pepper
3 (16 ounce) cans black beans, drained
4 cups chicken stock
salt and pepper
Directions:
1. Chop the onion and peppers and saute until soft.
2. Toss vegetables with cumin and cayenne pepper until well coated.
3. Stir in black beans.
4. Stir in chicken stock.
5. Let simmer for about 15 minutes.
6. Blend entire soup until it has smooth consistency.
7. Serve with sour cream, cheese and diced onions as desired.
