Easy Bake, Healthy Protein Banana Muffins

200 cals 14 g protein
Ingredients:
2 cups self raising flour - wholemeal
1/5 cup brown sugar (or 1/4-depending on taste)
1 tablespoon maple syrup
6 scoops protein powder
1 cup of skim or soy milk
1 egg
2 tablespoons margarine
1 teaspoon vanilla
1/2 teaspoon cinnamon
2 ripe bananas (or 1 large)
Directions:
1. Combine milk, egg, margarine, vanilla, syrup and banana, and blend in a mixing jug
2. Place flour, sugar and all other remaining ingredients in a large mixing bowl, combine. Mix in milk mixture.
3. Pour mixture into a 12 hole greased muffin tray
4. Bake for 20-25mins at 175 C
5. Note: Coconut, sultanas etc can also be added the muffins.
6. Can be made with pineapple (tinned in natural juice) with some mixed dried fruit!!! YUM!! Can add a little less margarine in this case.
