One of the easiest lemon cakes that always seems to please everyone. This is great with a nice tart lemon icing and so pretty for a summer layer cake.
Ingredients:
1 box yellow cake mix
1 package (3 oz) lemon jello
3/4 cup vegetable oil
4 large eggs
3/4 cup water
1/4 tsp lemon extract
1 or 2 tbsp lemon zest
Directions:
1. Preheat oven to 350 degrees.
2. Grease and flour the sides and bottom of your pan(s).
3. Combine lemon jello and the yellow cake mix in a large mixing bowl, and blend well. Add the vegetable oil, eggs, water, lemon extract, and lemon zest.
4. Mix lightly until well combined and pour the cake batter into the prepared cake pan.
5. Bake for 32 to 35 minutes. Remove when cake tests done.
6. Frost when cake is cool.
