Here is the quick version. I create my own blend of taco seasoning in about a minute, but didn't want the number of ingredients to scare anyone away from this really being a quick and easy recipe. Enjoy!
Ingredients:
1 (2 1/2 ounce) packet taco seasoning
1 lb ground beef
1 (16 ounce) can fat-free refried beans
1/3 cup salsa
8 ounces shredded cheddar cheese
2 ounces shredded mozzarella cheese
20 -40 tortilla chips (use doritos for yum!)
24 inches prepared pizza crust, ready to bake
1/2 head shredded lettuce, for serving
1/2 cup salsa, for serving
Directions:
1. Preheat baking stones, if using, in 425 degree oven 20-30 minutes.
2. Meanwhile, in skillet, cook ground beef until almost cooked through. Stir in 1/8 cup water and the taco seasoning and cook 2 minutes more, or until beef is cooked through.
3. Mix refried beans and salsa and set aside.
4. Shape pizza crusts and place on sheets of parchment paper.
5. Use pizza peel or edgeless cooky sheet to transfer pizzas to baking stones. Prebake the crust 5 minutes, then remove from oven. You can remove the parchment paper now.
6. Spread bean mixture over prebaked pizza crusts.
7. Spread a layer of meat.
8. Spread a layer of cheeses.
9. Crumble tortilla chips over cheese, to taste.
10. Bake 8-10 minutes more, or until crust seems baked through.
11. Serve topped with salsa and lettuce.
