Easy and Delicious Chicken Piccata

Delicious classic Italian dish! This is a restaurant quality dish that you would buy at any really nice Italian place. Easily impresses any company you have over for dinner!
Ingredients:
4 chicken breasts (flattened with a mallet)
2 tablespoons vegetable oil
4 tablespoons flour
1/4 cup dry white wine
1 teaspoon garlic, minced
1/2 cup low sodium chicken broth
2 tablespoons lemon juice
1 tablespoon capers, drained
2 tablespoons unsalted butter
3 lemons, sliced
4 sprigs fresh parsley
Directions:
1. Season chicken breasts with salt and pepper and dust with flour.
2. Spray saute pan with nonstick spray and add vegetable oil and heat over medium high heat.
3. Saute breasts in 2 Tablespoons of vegetable oil for approximately 2-3 minutes, flip over and saute 1-2 minutes and transfer to a warm plate. Pour off fat from pan.
4. Deglaze your pan with wine and garlic. Cook until garlic is slightly brown and liquid is nearly gone, about 2 minutes.
5. Add broth and fresh lemon juice and the capers. Return cutlets to pan and cook on each side 1 minute. Transfer cutlets to warm plate.
6. Finish with butter and lemon slices. Once butter is melted, pour over cutlets and garnish with fresh parsley.
