FAVOURITE CRUNCH SNACK
Ingredients:
3 oz. crushed wholewheat biscuits
3 oz caster sugar
1 egg yolk
1/2 oz chopped peel
1 oz. currants
1/4 teaspoon mixed spice 6 oz. flour
pinch of salt
Directions:
1. CREAM THE FAT AND SUGAR TOGETHER
2. BEAT IN THE EGG
3. ADD THE PEEL AND CURRANTS, SPICE AND SALT, THEN BEAT IN THE FLOUR
4. MIX TO A STILL DOUGH, USING A LITTLE MILK IF REQUIRED.
5. ROLL OUT ON TO A FLOURED BOARD
6. PRICK THE SURFACE ALL OVER WITH A FORK
7. CUT OUT WITH A BISCUIT CUTTER
8. BAKE ON A PREVIOUSLY GREASED BAKING TRAY
9. GAS MARK 6 FOR 20 MINUTES UNTIL LIGHTLY COLOURED.
10. LEAVE TO COOL SLIGHTLY BEFORE LIFTING FROM THE TRAY
