Easiest Ever Homemade Chicken Stock

This is the easiest way I know to make delicious, homemade chicken stock. Plus, it's a very useful way to get rid of rotisserie chicken leftovers. We eat the chicken, then put it in the crock pot over night.
Ingredients:
1 rotisserie whole chickens (store bought) or 1 leftover roast whole chicken
cooking spray (optional)
6 cups water
Directions:
1. Eat rotisserie chicken, but save bones, skin and any leftovers.
2. Spray crock pot with cooking spray. Place rotisserie chicken leftovers in crockpot and pour water over top. You may add more or less water if you need to. Water should just cover bird.
3. Set crockpot to low and cook for 8-10 (or more if you like) hours.
4. Remove bones from stock. Place broth in a large tupperwear or plastic bowl. Cool slightly, then place in refrigerator to chill. Fat will come to top. Skim congealed fat off top. Stock may gelatinize in refrigerator, but this is fine. It will turn into a rich liquid once you heat it.
