Oh this is so refreshing, when it becomes chilled. I can't stop eating it. It's crunchy and chewy and healthy.
Ingredients:
2 cups cooked short-grain brown rice, cooled
fresh dill, gently plucked
fresh parsley, gently plucked
1 raw fresh ear of corn, scaled
1 carrot, finely chopped
1 large scallion, chopped
2 lemons, juice of
salt and pepper
all purpose seasoning, i use simply organics
lemon
olive oil
Directions:
1. Mix all ingredients in a bowl. Refrigerate till serving.
