Dutch Apple Pancake

This is a favourite Saturday morning breakfast with my family! It may look really fancy, but even the kids can help! So simple and so delicious! Best if made in a cast iron frying pan.
Ingredients:
pancake
4 eggs
1 cup milk
3/4 cup flour
1/4 tsp. salt
3 tblsp. butter
apple topping
5 medium sized apples (tart ones are best)
1/4 cup brown sugar
1 tsp. ginger
1 tsp. cinnamon
Directions:
1. Preheat oven to 425
2. Mix eggs, milk, flour, salt in a blender. Melt in a cast iron frying pan over medium heat 1 tbsp. of butter. When it is sizzling in the pan, pour the batter in and put immediately into oven.
3. Meanwhile, peel the apples, core and slice each apple into slices. (I usually get 12 slices per apple) Over medium low heat, melt the remaining 2 tblsp. of butter. To that, add the brown sugar, and the spices. Add the apples and gently saute them stirring once in a while until they are softened. Remove from heat and once the pancake is out of the oven, serve immediately.
