Dublin Short Ribs

I like to make these quite often. Makes a good one dish meal, and it does not require a lot attention.
Ingredients:
3 -4 lbs meaty short rib of beef
1 quart water
2 teaspoons salt
1/4 teaspoon pepper
2 sprigs parsley
2 celery ribs (leaves only)
1 lb small white onion, peeled
1 lb young carrot, pared and halved
Directions:
1. Place short ribs in a heavy pot.
2. Add water, salt, pepper, parsley and celery leaves.
3. Cover and simmer until almost tender (about 1-1/2 hours).
4. Add onions and carrots.
5. Simmer until the vegetables are done (about 20 minutes).
6. Adjust seasoniongs.
7. Serve with creamy horseradish sauce.
