Some frugal soul must have thought of this recipe to utilize that last 1/2 cup of mashed potatoes. These are actually quite good and the flavor is reminiscent of a fried potato bread, only sweetened. Momma served these drizzled with warm honey and sprinkled cinnamon.
Ingredients:
1/2 cup of mashed potatoes (mashed with milk and butter)
1/4 cup of sugar
1 egg beaten
1/2 cup of sour cream
1/2 teaspoon of vanilla extract
1 1/2 cups of all-purpose flour
1/2 tsp of baking soda
1/4 tsp of baking powder
cooking oil for deep fat frying
additional sugar or confectioner's sugar
warm honey or cinnamon
Directions:
1. In a bowl, combine potatoes, sugar, egg, sour cream and vanilla.
2. Combine dry ingredients, stir into potato mixture.
3. Heat oil in a deep fat fryer to 375 degrees.
4. Drop dough by teaspoonsful 5 or 6 at a time, into hot oil.
5. Fry for about one minute per side until deeply golden brown.
6. Drain very well on double thickness paper towels.
7. Roll in powdered sugar and serve immediately.
8. Alternately drizzle with honey and cinnamon.
9. Makes about 3 1/2 dozen.
