I seem to find a lot of prune recipes in G-Robert's and Momma's recipe files. I guess we just regular folks, hmmm? To be politically correct I suppose you could call this a dried plum and bourbon cake. There, feel better? Read more ?
Ingredients:
1 cup of prunes, cooked, cooled, pitted and mashed. (we stewed 'em in water with a cinnamon stick, a clove or two and a strip of lemon peel)
2 cups flour
1 tsp of baking soda
1/2 tsp of salt
1 tsp of ground cloves
1 tsp of allspice
1 tsp of nutmeg, please use fresh ground, it makes all the difference
1 tsp of cinnamon
1/2 teaspoon of ginger
2 cups of sugar
3 eggs
1 cup of vegetable oil
1 tsp of vanilla or
1/2 teaspoon of brandy extract
1/2 cup of buttermilk
1 cup chopped pecans
glaze
1 cup of powdered sugar
2 tbsp of bourbon
a little bit of lemon juice mixed with water to make the glaze thin enough to pour, no more than 2 tsp at best.
Directions:
1. Preheat oven to 350 degrees.
2. Barely cover prunes with some water and stew with the cinnamon stick, cloves and lemon peel. Drain and cool.
3. Sift together flour, soda, salt and all the spices.
4. Mix the sugar and the eggs until the sugar dissolves.
5. Add oil and vanilla.
6. Stir.
7. Pit prunes and cut in little pieces.
8. Add the buttermilk and the flour mixture to the eggs/sugar and oil, alternately..
9. Stir in prunes and pecans.
10. Pour into a greased and floured bundt cake or tube pan.
11. Bake for one hour.
12. remove from pan immediately and glaze while still warm with the bourbon glaze.
