Dried Cranberry Cheese Spread

A different kind of cheese and fruit spread that is delicious on a plain water cracker. Easy to do and for the cranberry lovers it is a yummy Holiday treat. Good for an appetizer table.
Ingredients:
1 package of cream cheese cubed and softened-8 oz.
4 ounces of havarti cheese, shredded
4 ounces of smoked swiss cheese shredded (about 1 cup)
1/4 cup of crumbled blue cheese
1/4 cup of slivered almonds, toasted in toaster oven, don't burn
3 tablespoons of kirshwasser (cherry liquour)
1 small shallot minced extremely fine
1/3 cup of dried cranberries, coarsely chopped
Directions:
1. Let all the cheese stand at room temperature for at least 30 minutes to soften. Toast almonds, let cool. Chop coarsely.
2. I use my potato masher and mix the cheeses, the nuts and the liquour and shallot until well blended. If you have a food processer, you can accomplish this in a few pulses. I don't like cleaning mine, so I get the arm work out with the masher. If only it would take out the calories of eating this.
3. Add the chopped dried cranberries and mix in well.
4. I have a pretty heart shaped mold that I line with cheese cloth and fill packing the cheese in very tightly and then cover with cheese cloth and a double wrap of plastic wrap. Put in the refrigerator over night to mellow the flavor. (even two days is okay, you want the cherry liqour to mellow out with all the cheeses)
5. Flip mold over on plate, at least 20 minutes before serving so it can warm up. remove cheese cloth and surround with your favorite crackers. My kids liked the butterfly shaped plain crackers.
6. It's pink, it's delicious and people can't guess what is in it.
