The original recipe for these cookies was featured on FoodTV.ca and was written by Dreena Burton. She made them with pecans, chocolate chips, almond extract and dried cherries, so I turned the recipe on it's head and morphed it into this! Read more ! One thing remains the same: you'll have a hard time believing that these tasty morsels have no dairy, eggs, or wheat.
Ingredients:
1 cup spelt flour
1/3 cup ground hazelnuts
1 tsp baking powder
1/4 tsp baking soda
1/4 cup brown sugar
1/4 tsp salt
1/3 cup maple syrup
1 tbsp vanilla
1/4 cup canola oil
1/4 cup dried cranberries
1/4 cup raisins
1/4 cup chocolate chips
Directions:
1. Preheat oven to 350°F, line baking sheets with parchment or Silpat.
2. Combine the dry ingredients in a large bowl.
3. Separately, mix syrup with the vanilla and oil.
4. Add the wet mixture to the dry ingredients, stirring until just combined.
5. Add cranberries, raisins, and chocolate chips; mix in well.
6. Bake 11 minutes, until just golden (do not overbake!).
7. Let cool on the sheet for no more than 1 minute before moving to a cooling rack.
