This comes from a Farmers' market cookbook and is an excellent way to enhance fresh green beans. To make it easier and 1 less pot on the stove the beans can be cooked ahead and chilled.
Ingredients:
1 lb fresh green beans, trimmed
2 tablespoons butter
2 tablespoons olive oil
1/2 sweet red pepper, seeded and diced
1/2 red onion, thinly sliced
1 tablespoon dijon mustard
1/4 cup fresh orange juice (not frozen)
2 teaspoons brown sugar
1/3 cup almonds, toasted and chopped
1 teaspoon fresh oregano
salt and pepper
1 pinch hot pepper flakes (optional)
Directions:
1. To a medium pot of boiling water, add beans and cook just untl they are tender crisp - approximately 5 minutes.
2. Meanwhile, melt butter and Olive oil in a skillet over medium heat.
3. Add red pepper and red onion and saute until the onions are soft, about 5 minutes.
4. Whisk in Dijon, orange juice and brown sugar.
5. Stir in the oregano, almonds and drained green beans.
6. Toss to coat beans and season to taste with salt and pepper.
