Dr Mercolas No-grain Crepes

Ingredients:
2 large whole eggs
1 cup whole organic milk
1/2 cup water
1/4 tsp sea salt
1/2 tsp vanilla extract
1/2 tsp grated nutmeg
1 cup beans 'r' us bean flour
2 tbsp melted organic butter or coconut oil
Directions:
1. Pour eggs, milk, water, salt, nutmeg, vanilla, flour, and butter or oil into blender container. Process until just mixed, scraping down sides, if necessary. Process on medium for about 10 seconds to blend.
2. Important step: Let rest for at least 30 minutes and preferably 1 hour.
3. Heat a crepe pan or heavy flat skillet over medium high until hot. Grease with a dab of oil, then pour 1/4 cup batter over hot pan, rotating pan to distribute a light coating of batter evenly. Cook crepe until golden on the bottom and starting to dry on top, about 1-2 minutes.
4. Flip crepe with metal spatula and cook less than 1 minute more. Remove to plate to cool. Repeat procedure until all crepe batter has been used.
5. Use immediately as wrapper for meat and/or vegetable or cheese fillings, desserts, etc. or wrap tightly and refrigerate or freeze for future use.
