Fresh pumpkin can be used in this recipe, or you can use cooked, mashed sweet potatoes.
Ingredients:
1 (15 ounce) can pumpkin puree
4 eggs
2/3 c. water
1 c. vegetable oil
3 c. white sugar
3 1/2 c. all-purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
1/4 tsp. ginger
Directions:
1. Preheat oven to 350° F. Grease and four three 7x3-inch loaf pans.
2. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a spearate bowl, whisk together the four, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Stir the dry ingredients into the pumpkin mixture until blended. Pour into the prepared pans.
3. Bake for about 50 to 60 minutes. Loaves are done when a toothpick inserted in the center comes out clean.
