Country flavor chicken stew serve with cornbread and teas
Ingredients:
2 1/2 to 3 lb broiler or fryer cut up
6 cups water
2 tbls. beef bouillon
2 medium tomatos chopped
2 medium onions chopped
2 medium potatos cut into 1/2 in. slices
2 medium sweet potatos cut into 1/2 in. slices
3 ears of corn cut into 3 pieces
1/4 lb. squash cut into 3 pieces
1/2 cup fresh or frozen peas
1 small hot chili steamed, seeded and sliced
2 tsp. salt
1/4 tsp. pepper
snipped chives
Directions:
1. Heat Chicken,water, and bouillon to boiling in Dutch Oven; reduce heat. Cover & simmer 30 min. Skim off fat. Add remaining ingredients except chives. Heat to boiling; reduce heat. Cover and simmer until thickest pieces of chicken are done & vegetables are tender. about 20 min. Garnish each serving with chives.
