Double Ginger Crinkle Cookies

A tasty ginger cookie with chopped candied ginger I copied from a forum.
Ingredients:
3/4 cup shortening
1 cup sugar
1 large egg
1/4 cup molasses
2 cups flour
1/4 teaspoon salt
1/2 cup candied ginger, finely chopped
1 tablespoon ground ginger
1 teaspoon cinnamon
1 teaspoon clove
2 tablespoons sugar, for rolling dough
Directions:
1. In large bowl, cream shortening and sugar; add molasses and egg.
2. Combine the rest in a bowl (except granulated sugar) and mix together.
3. Add to creamed mixture.
4. Shape into 1-inch balls and roll in sugar.
5. Place 2-inches apart on ungreased baking sheets.
6. Bake at 350° for 8- 10 minutes or until golden.
7. Do not over bake! They should be slightly soft when removed from the oven.
8. Let cool in pan for a few minutes before removing to a rack to cool.
9. Use a 1 Tbsp cookie scoop to shape them.
