this recipe sounded good so I thought I would post it... i will change it a bit.... i will substitute apple juice for the orange juice and use grated lemon peel instead of the orange peel... and I will most likely use pecans instead of the walnuts. Read more ... but is does sound good.!!! LOL
Ingredients:
4 cups flour
2 cups sugar
1 tablespoon baking powder
2 teaspoons salt
1 teaspoon baking soda
1/2 cup shortening
2 large eggs
1 1/2 cups orange juice
1 cup whole berry cranberry sauce
1 tablespoon orange rind, finely grated
1 cup fresh cranberries chopped
1 cup walnuts, chopped
Directions:
1. Oven Temp: 350°
2. Recipe Cooking Time: 60 minutes
3. Pan Type: two 9 x 5 loaf pans
4. Preheat Oven.
5. In a large mixing bowl combine the flour, sugar, baking powder, salt and baking soda.
6. Stir until well blended.
7. Add shortening and mix on low speed of mixer to blend.
8. Add the eggs, orange juice, whole berry cranberry sauce and grated orange rind.
9. Mix on low setting with mixer until dry ingredients are moistened.
10. Fold in cranberries and nuts.
11. Spray pans with nonstick pan spray.
12. Pour batter into prepared pans.
13. Bake cranberry bread for the allotted time or until toothpick inserted in the middle comes out clean.
