A one-pan cake that needs no icing. I found this in a wonderful undated (1970s??) self-published cookbook, Cooking for My Friends , by Stevie Scott. This 357 page book was TYPED! I have only made this once and decided it was good enough to share. I mixed the chips and nuts into the batter instead of leaving them on top. And I used peppermint extract instead of creme de menthe. Next time, I'll cut the sugar back to 3/4 cup.
Ingredients:
1/3 cup salad oil
2 ounces unsweetened chocolate (2 squares)
3/4 cup water
1 cup sugar
1 egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
3/4-1 cup semi-sweet chocolate chips
1/3 cup walnut pieces or 1/3 cup pecans
Directions:
1. In an 8 inch square cake pan, combine oil and chocolate. Heat in 350F oven for 4 minutes - stir.
2. Add water, sugar, egg, flour, soda, salt and vanilla. Beat batter with fork until smooth, uniform and creamy (about 2 mins). Spread evenly in pan and sprinkle with chocolate chips and nuts. Bake at 350F for 40 mins until cake tests done.
3. Great topped with whipped cream flavoured with creme de menthe.
