Double Cheese Souper Bowl

A souper soup...hot creamy, cheesy..warming ..from the Wisconsin Dairy Association.Terrific for a tailgate party.
Ingredients:
4 tablespoons butter
1/2 cup onion, diced
1/2 cup celery, washed, diced
4 tablespoons flour
3 cups milk, warm
1 cup wisconsin sharp cheddar cheese, shredded
1 cup wisconsin gouda cheese, shredded
5 drops hot sauce
1/2 cup ham, diced
1 tablespoon chives, minced
white pepper, ground, to taste
Directions:
1. Over medium heat, in a heavy bottomed sauce pan, heat butter until melted. Stir in onion and celery, cover.
2. Cook 3 minutes or until transparent.
3. Stir often to prevent browning.
4. Stir in flour to thicken. Cook until it bubbles.
5. Slowly stir in warm milk, mixing until thickened and smooth.
6. Bring to a simmer (do not boil) and continue stirring.
7. Reduce to very low heat and add Wisconsin Cheddar and Wisconsin Gouda cheeses, white pepper and hot sauce.
8. Stir until well blended. Add ham and chives.
9. Place in a thermos and bring to any sports event. Serve in mugs at your tailgate parties.
10. Substitutions: Beer or non-alcoholic beer could be used instead of milk.
