Double Cheese Soup

A nice cold weather soup. This is great for low carb diets.
Ingredients:
4 tablespoons butter
1 onion, diced
1/2 cup celery, sliced
4 tablespoons flour
3 cups milk
1 cup shredded cheddar cheese
1 cup gouda cheese, shredded
salt, pepper
5 drops hot sauce
chives (to garnish)
Directions:
1. Melt butter in saucepan.
2. Add onion and celery, stir to soften.
3. Add flour, to thicken.
4. Slowly whisk in milk until smooth.
5. Bring to a simmer.
6. Add cheeses stirring until blended.
7. Add salt& pepper to taste and garnish with chives.
