Double Cheese Cheeseburgers - Low Carb

I have not tried this recipe. I got this recipe from Ossg Recipes.
Ingredients:
1 lb ground beef
1 tablespoon worcestershire sauce
2 scallions, chopped
1 tablespoon chopped parsley
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces cheddar cheese, block divided
1/2 cup heavy cream
1/2 teaspoon dry mustard
1/4 teaspoon paprika
1/4 cup water
1 egg yolk
Directions:
1. In a bowl combine the first 6 ingredients. Cut half of the block cheese into 1/2 thick slices. Form beef mixture into 8 patties. Place 1 slice of cheese in center of 1 beef patty, top with another patty, pinch sides together to seal in cheese. Press the sides of the burgers together to round the edges. Repeat with remaining patties until you have 4 burgers. In skillet over medium high heat, cook the burgers until desired doneness is reached, 4-5 minutes per side for rare (I would only cook burgers rare if I grind my own beef - C.W.). Transfer burgers to serving platter; keep warm.
2. Shred reamining cheese. In a pot, combine cheese, cream, mustard, paprika & 1/4 cup cold water. Cook, stirring over med-low heat until cheese melts. In a small bowl gradually whisk 2 T. of the hot cheese mixture into egg yolk. Gradually whisk this mixture into the cheese mixture; cook until cheese sauce thickens. Serve sauce with the burgers.
