9 years ago when I moved out to Shady Acres Trailer Park here in Saint Joseph, Missouri & my first trailer. Read more . So I made it on July 3, 2000 and thought that I would do these cookies for the 4th of July. Chris's family and friends just LOVED these cookies. Knowing that these cookies DOESN'T last very long around my house. So as I was thinken to myself. I thought that I would make an double batch.
Ingredients:
8 cups sugar
2 cups (4 sticks) margarine, softened
1 1/8 teaspoons salt
2 cups milk
1 cup unsweetened cocoa powder
4 teaspoons vanilla extract
2 cups (18 oz, 1 lb, 2 oz) creamy peanut butter
16 cups (42 oz, 2 lb & 10 oz) rolled oats
Directions:
1. Combine sugar, margarine, salt, milk and cocoa powder into a large sauce pan.Mix well.
2. Bring to a boil over medium heat, stirring continually.Boil, stirring continually for 1 minute.
3. Remove saucepan from heat.Add vanilla, peanut butter;Mix until smooth.Add rolled oats.Mix well.
4. Drop cookie dough by spoonfulls onto a surface lined with waxed paper.Let stand until cool.
5. Vartiation - To make these cookies extra special.Add 4 cups flaked coconut and use chunky peanut butter instead of the creamy peanut butter.Also can use peanuts to this recipe or nuts.Freeze up to 1 year.
