~Don't believe that Dee Dee Sharp had this in mind...but...was playing 60's music today Mashed Potato Time ...reminiscing...Baby Boomer!!~
Ingredients:
2 pounds of thin skinned potatoes,cut into chunks
3 fresh garlic,peeled
6 slices of bacon,cooked,drained,crumbled
1 cup green onion,sliced (with tops)
1/2 cup cream
1/4 cup sour cream
3/4 cup swiss cheese,grated
pinch of white pepper,salt,nutmeg
Directions:
1. Cook potatoes and garlic together in saucepan until tender,drain and place back into pan.
2. Cook the green onion in a little of the bacon grease,set aside.
3. Using hand held potato masher(electric mixer,seems to make them gummy...anyway...for me,that is)
4. Mash the garlic and potatoes with the cream,sour cream,until will blended.
5. Stir in the swiss cheese pepper,salt,nutmeg.
6. Note: I like fresh tomatoes,seeded,diced in mine.
