Doombs Crock Pot Potato Chowder

This is one of my dad's recipes that has become a true favorite. I've actually tweeked the originally recipe a bit because I love the extra flavor a bay leaf and onion soup mix gives to the boiled potatoes.
Ingredients:
9-12 potatoes, cut into bite-size chunks (if using red no need to peel
1-2 bay leaves, depending on the size
1 package lipton onion soup mix (or store brand)
2 cans cheddar cheese soup, concentrate (like campbells)
8 ounce sour cream
2 soup cans full milk
1 medium onion, chopped
1/2 cup butter
1-2 cups diced ham (any kind will do)
salt & pepper to taste.
Directions:
1. Place potatoes into a pot and cover with water.
2. Add onion soup mix & bay leaves and boil until potatoes are cooked, 20-30 minutes.
3. While potatoes are cooking melt butter in a pan.
4. Add onions and saute for 5-10 minutes.
5. Drain potatoes, but *SAVE* 1 1/2 cups of the boiling water and set aside.
6. Combine both cans cheddar cheese soup and sour cream into a crock pot.
7. Whisk in milk and the reserved onion potato water.
8. Add potatoes, onion and ham and season with salt & pepper to taste.
9. Cook in crock pot over High = 3-4 hours *OR* Low = all day.
