This is a small portion of good lasagna made without all of the fancy cheeses for those of us who just like the basics :)
Ingredients:
1 pound ground chuck
1/2 cup onion, chopped
1/4 cup water
1 (14.5 ounce) can petite diced tomatoes with basil, garlic and oregano, undrained
1 (6 oz.) can tomato paste with basil, garlic and oregano
1 pinch of sugar
6 dry lasagna noodles
1 tablespoon dried parsley
pam cooking spray
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
Directions:
1. In a 10 inch sauce pan, over medium heat, brown ground beef and onion till brown then drain fat.
2. Return meat mixture to the pan.
3. Mix in the diced tomatoes with their liquid, tomato paste, sugar and water.
4. Simmer, uncovered, for 20 minutes, stirring occasionally. Set aside.
5. Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook for 5 to 8 minutes (until cooked), drain.
6. Lay noodles flat on paper towels, and blot dry.
7. Preheat oven to 300 degrees.
8. Spray an 8X8X2 inch Pyrex baking dish with Pam.
9. Layer 1/2 of the lasagna noodles in the bottom of the baking dish (Noodles may have to be trimmed to fit)
10. Next, put 1/2 the meat sauce mixture then 1/2 of the mozzarella cheese and 1/2 of the cheddar cheese over the noodles.
11. Repeat with remaining ingredients.
12. Bake (uncovered) in the oven 30 minutes.
13. After cooking for 15 minutes, sprinkle the dried parsley over cheese.
14. Let stand 10 minutes before serving.
