Dominican Corn Bread

new twist on a southern staple
Ingredients:
1/2 diced mixed candied fruit
2 tbs. dark rum
1/3 cup sugar
1/3 cup soften butter
2 eggs
1 cup coconut cream
1 cup yellow cornmeal
1 cup all porpose flour
1 1/2 tsp. baking powder
1/2 tsp.salt
1/2 tsp. ground cinnamon
1/4 tsp. ground cloves
1 cup shredded fresh coconut
Directions:
1. preheat oven to 375F.
2. in a small bowl mix fruit and rum-set aside
3. in a large bowl, beat sugar and butter' add eggs-one at a time- beating until well blended
4. stir in rest of the ingredients, except fruit mixture and coconut, and beat at least 30 times by hand
5. fold in coconut and fruit mixture
6. pour into a greased 9 X 5 inch pan
7. bake for 40-45 minutes, until golden brown and a toothpick, inserted in center comes out clean
8. cool 20 minutes; remove from pan and cool completely before slicing.
