Another quick and easy dessert. You can use any combination of your favorite fruits and berries. Make it with pineapple and sprinkle with coconut before baking for a nice tropical end for a summer BBQ. Make with thin sliced apples, pears, and Craisins and sprinkle with chopped nuts and serve warm from the oven with some vanilla ice cream for a crisp fall evening. The possibilities are endless.
Ingredients:
3 cups fruit
1 cup flour
1 cup sugar
1/2 teaspoon salt
1 egg
2 teaspoons vanilla
6 tablespoons butter
Directions:
1. Cover bottom of 8x8 baking dish with fruit.
2. Mix flour, sugar, salt. (Add nuts, coconut, etc.).
3. Beat egg and vanilla. Mix with the dry ingredients to make crumbs. Spread over fruit.
4. Melt butter and drizzle over the top.
5. Bake 30 - 35 minutes at 350 until golden brown.
