I enjoy the complexity of flavors in this recipe.
Ingredients:
1 cup uncooked rice
1 cup yellow onion, chopped
1 cup olive oil
3 tablespoons olive oil
1/2 cup pine nuts
1/4 cup fresh parsley, chopped
3 scallions, chopped
2 tablespoons fresh mint
2 tablespoons fresh dill
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup chicken stock
3/4 cup lemon juice
leafy greens
Directions:
1. Combine all ingredients (first 12). With a 16 oz jar of grape leaves, remove stems, place shiny side down and wrap 1 Tbsp of mixture in leaf. Layer in a pot along w/ leafy greens & simmer in stock & lemon juice 1 hour. Allow to cool before transfering.
