from biggest loser cookbook turkey and bean chili low calorie, protein packed, hearty meal add additional spices to taste try substituting white or kidney beans for the pintos...delicious try substituting skinless chicken breast for turkey for a different taste i prefer turkey, white, black, and kidney beans, adding lime juice, worchestershire...and sometimes topping with low fat cheese or sour cream if my calories can handle it ;) oh, and i just cook the meat till done, then throw it all in the pot and season to taste!!!!
Ingredients:
3 cups chopped onion
1 1/4 lbs lean ground turkey
3 cups diced tomatoes or 1 can (28 ozs) drained diced tomatoes
15 oz pinto beans
15 oz black beans
1 cup fat-free, low-sodium chicken broth
2 tbsp chopped garlic
2 tbsp chili powder
1 tsp dried oregano
1 tsp ground cumin
1 tsp mustard powder
1/2 cup sliced black olives
1/2 cup chopped fresh cilantro
Directions:
1. spray olive oil cooking spray in pan
2. add onions until soft and starting to brown
3. add ground turkey until no longer pink
4. add tomatoes, beans, broth, garlic, chili powder, oregano, cumin, and mustard powder
5. bring to boil, then reduce heat to low
6. cover and simmer for 20 mins
7. garnish with cilantro and olives
