Dobos Tort - Caramel Chocolate Cake

This cake is made all over Eastern Europe. It is claimed by Hungarians ( as the name Dobos - read Dobosh - means drum in Hungarian), however it has been invented by an Austrian - Josef Dobos, sometimes in 1800's. Read more . My husband is from Transylvania and this cake is very popular there for special occasions. I have also Croatian and Serbian friends that make it on regular basis (I guess all the old Austro-Hungarian Empire countries have it on their recipe books). My hubby helped me decorating it - I am not very good at presenting my meals :o/ It is time consuming, however, very rewarding.
Ingredients:
cake layers
125 g sugar
5 eggs
125 g flour
1/4 tsp vanilla extract
cake cream
4 eggs
125 g sugar
2 generous spoons cocoa
300 g whipped butter
top
8 hazelnuts
1/3 cup sugar
Directions:
1. Beat the yolks with sugar until sugar is completely incorporated (approx. 15 min). Add gradually the flour and the vanilla extract. Separately beat the egg white and add it to the mixture.
2. Butter and flour round baking pans and set oven at 375F. The mixture will be enough for 5-6 layers of cake. You will have to bake them separately . Spread a very thin layer of mixture (if you want you can divide in advance the mixture in 5) and bake it for 7 - 10 min. You may need to bake it in 2 or 3 series ( I had 3 pans available).
3. Cool the layers and start on the cream.
4. Beat the eggs with sugar and cocoa at bain-marie or in a double boiler pan over low heat. You have to keep on beating this mixture until you get the mixture to the consistency of a cream. Do not overcook - you don't want an omelet! Set it aside to cool and keep on beating until cold. Separately beat the butter and add the cocoa mixture 1 spoon at a time.
5. Alternate the layers with the cream and the last layer set on the side.
6. Warm 1/3 cup sugar to caramelize it and pour over the last layer. With a knife mark down the slices - it will be easier to cut it.Set the last layer on top of the cake. Drop hazelnuts in the caramel and decorate the cake.
