Low fat, Low Calorie, and Low Carb. Bars. I rec'd this from a friend several years ago. I have tweaked it enough so that it is a little different from the original recipe. Everyone that has tried it seems to like it enough to empty the pan. Hope you like it as well!
Ingredients:
1 1/2 cups stone ground wheat flour
1 1/2 cups rolled oats
1/2 cup raisins
1/8 cup hot water
1/8 cup lemon juice
2 eggs
1 teaspoon baking powder
1/8 teaspoon sea salt
1/2 cup low-fat butter
1/4 cup olive oil
1 cup honey
1/2 cup semi-sweet chocolate chips
Directions:
1. Combine raisins, hot water, and lemon juice in bowl. Let sit for 10 minutes.
2. Combine flour, oats, baking powder, and salt. Let it rest.
3. Beat butter, Oil, and sugar until well mixed. Then add eggs and mix again.
4. Combine all ingredients in large bowl. Stir well!
5. Spread dough in 9 x 13 greased baking dish.
6. Bake for 35 minutes at 350 deg., test with toothpick.
